I will be glad to share more details here about current home made alambic which produced already some good quantity of 100% sugar canne rum. Would be great to share tips, recipes, how to improve/uprgade equipments, etc...

BiG Bertha makes high% of distilled. I think: Nuoc Mia rum is verry delicious. how many% did the distillate? We have in Germany not Ngoc mia. I distill cherries, plums, apples and white wine (ouzo) This is currently my distillery.

I start with 13,2 % Alc and I distill 2 Liter "Nuoc Mia Rum" after dilute (i 1 months) I get 4 Liter 45 % Alc not bad for simple "Nuoc Mia, but you have better fruits ...

If anyone is doing any distilling anytime in the near future, and is open to having someone show up and watch, I'm actually working on a novel set during the gin craze... and one of my characters is a small-batch distiller. I've researched enough that writing about it isn't too hard, but I feel like actually seeing some small batch distillation done in person could be handy for me. So... let me know if you're up for having a guest observe. (I'm an experienced homebrewer, etc.)

Yesterday I made quince mash. Clean 15 kg quinces, cut, wash and rasps small.
